This Multicoloured Salad allows us to take full advantage of the fresh vegetables from the market! This Salad is seasonal. For the realisation of this Salad do not hesitate to use a mandolin. Slice the vegetables and obtain a finesse that sets the tone for this Salad. Enjoy !
First, here is the list of the different ingredients. You will need it to prepare this Multicoloured Salad that serves 4 to 6
- 2 small zucchini
- 1 cucumber and 1 fennel
- 3 avocados
- 10 basil leaves and
- 3 tbsp neutral oil, 3 tbsp avocado oil and 3 tbsp cider vinegar
- the juice of a lemon
- ground pepper
Now, here are the few steps you will need to follow. Make this recipe with a preparation time of about 15 minutes
Start by washing the vegetables and the basil. Peel the cucumber. Cut the zucchini into sticks. Cook them for 2 minutes in salted boiling water or stea it . Drain them.
Then, very finely chop the fennel and cucumber using your mandolin. Mix them with the zucchinis. Quickly mix the lemon juice with the two oils. Add the vinegar, pepper and chopped basil. Whisk until an emulsion is obtained.
After that, peel the avocados. Cut them in 2. Remove the pits. Cut each half into strips.
Finally, distribute the vegetables in large bowls. Place some avocado on top and drizzle with the sauce. Serve immediately. Enjoy your lunch!
