These Potato Pancakes reminds me of my childhood. These are delicious small vegetable and savoury pancakes that can be served at dinner with a good vegetable soup but also as an accompaniment to white meat.
First here is the list of the different ingredients you will need to prepare the Potato Pancakes that serves 4 to 6
- 1 kg or 2 lb Potatoes Charlotte type
- 1 small white onion, peeled and chopped
- 1/2 bunch parsley, chopped
- 2 or 3 Free range eggs depending on the size
- 2 tablespoons cornstarch
- One pinch of Nutmeg, salt and freshly ground pepper
- Vegetable oil
Now, here are the few steps that you will have to follow to make the Potato Pancakes
Start by finely grating the Potatoes. Add the chopped onion and parsley.
Put everything in a salad bowl. In a second large bowl, beat the eggs into an omelet.
Mix your beaten eggs with the grated potatoes. Add the starch and finally the nutmeg, salt and pepper.
Heat your vegetable oil in a large skillet. As soon as the oil is hot, place small heaps of your potato and egg mixture in your skillet.
Let the first side grill for about 2 to 3 minutes. Flip your Potato Pancakes and let it grill again for 2 to 3 minutes.
As soon as your patties are nicely browned, place them on a paper towel. Serve them quickly with your vegetable soup, salad and /or white meat.
