The Caponata, the Sicilian dish, is a vibrant mixture of fresh vegetables, including eggplant, onion, tomatoes, olives, capers, basil and pine nuts as an option. A Flavour Dish that we should all be eating more of.
Ingredients for 4 People:
- 4 eggplants, diced
- 1/2 cup (150g) pitted green olives
- 4 Tbsp (90g) capers
- 2 Tbsp (30g) pine nuts
- 4 tomatoes, diced
- 2 Tbsp (1dl) balsamic vinegar
- 2 Tbsp (40g) sugar
- 1 onion
- 1/3 cup basil leaves
- 1/2 cup olive oil
- salt and pepper
Heat oil in a large pan and add diced eggplants. In another pan, heat oil and add chopped onion with sugar until caramelised. In the meantime, heat tomatoes or tomato sauce in a pot and slowly add balsamic vinegar. Add the capers, olives and pine nuts to the caramelised onion.
Once the eggplants cooked and tender, add the tomatoes and the onion/caper/olive preparation.
Add salt, pepper, basil leaves and serve very hot. Enjoy!
