This Cold Tomato Soup and Goat Cheese Beads is a soup that is nutritious and retains all the vitamins and vivid colour from the raw vegetables. The fresh Goat cheese gives the little creamy texture you need and is also a nice topping !

- 3 pounds red tomatoes
- 1/2 stick fresh goat cheese
- 1 small bunch of chives ( optional)
- 8 Tbsp olive oil
- Fresh Basil leaves
- Ground pepper, salt
Here are now the few steps you need to follow to make the Cold Tomato Soup and Goat Cheese Beads and that takes about 15 minutes
Mix together the tomatoes already washed and sliced with the olive oil, salt, pepper and the basil leaves.
Put aside in the refrigerator. Cut the chives in very small pieces and add to the goat cheese, if you wish. Don’t forget it is optional !
Get the soup plates ready and pour the cold soup, then dispose 5 little goat cheese marbles on top of it and serve with some basil leave and a nice piece of Sourdough Bread or fresh Baguette if you like.
