First, here is the list of the different ingredients you may need to prepare the Carrot and Parsley Soup that Serves 4 with a cooking time of 45 minutes

  • 2 cups (500 g) carrots, peeled and diced
  • 1 chopped yellow onion
  • 2 crunched garlic cloves
  • 1 small bunch of parsley washed, dried and chopped
  • 4 cups 1 l)  vegetable broth
  • 3 Tbsp (50 g) butter

Now, here are the few steps you will need to follow to make the Carrot and Parsley Soup

In a saucepan, melt the butter and sauté the onion and crushed garlic for about 10 minutes or until translucent. Add carrots, saute 5 minutes. Pour the vegetable stock, chopped parsley and cook for 30 minutes or until carrots are tender.

Remove from heat. Mix in a blender to obtain a smooth texture. Put it all back in your pan on low heat and let simmer for a few minutes. Add salt, pepper and serve with some sprigs of parsley that you kept aside and, bon Appétit !
