This Crab Cake with Tarragon Mayo is an easy appetizer that is sure to please everyone. So go ahead and make it a hit!

- 1 large can of Chatka crab
- 5-6 large tomatoes
- 7 eggs + 1 yolk
- 20g butter
- 1 tsp hot mustard
- ½ bunch of tarragon
- 250ml grapeseed oil
Now, here are the few steps you’ll need to follow to make this crab cake with tarragon mayonnaise. It takes 15 minutes to prepare and 40 to 45 minutes to cook.
Boil, peel, and seed the tomatoes. Melt them in a pan with 10g of butter until completely evaporated. You should have a purée. Season with salt and pepper.
Rinse the crab under running water and drain. Roughly crumble it into a salad bowl. Add the tomato puree. In a bowl, quickly beat the whole eggs with a fork. Season with salt and pepper. Pour the eggs into the bowl, mix with the crab and tomato puree.
Preheat the oven to 180°C (350°F). Butter a springform pan, pour the mixture
into it, and bake for 35-40 minutes, or until the mixture no longer wobbly. Remove from the pan and let cool. To prepare the mayonnaise, combine the egg yolk and mustard in a bowl. Whisk in the oil to thicken the mayonnaise. Season with salt and pepper.
Finely chop the tarragon leaves and stir them into the mayonnaise. Refrigerate until ready to serve.
