Duck à l’Orange is one of the culinary delicacies that we must cook at least once. Conveniently, this winter holiday season is a perfect excuse to get behind the stove, and start cooking!

First, here is the list of the different ingredients you will need to prepare the Duck à l’Orange for 4 people

  • 1 Duck of about 1.2 kg or 3 lb
  • 3 oranges
  • 4 garlic cloves
  • 30g or 2 Tbsp butter
  • 100ml or 4 oz Grand Marnier
  • 100ml or 4 oz  white wine
  • 40g or 2 Tbsp caster sugar
  • 40ml or 2 oz vinegar
  • 1 sprig of thyme and 4 dried bay leaves
  • Salt and pepper from the mill

Now here are the different steps you will have to follow to make this delicious poultry with a preparation of 30 minutes and a cooking time of about 1 hour 30 minutes.

Preheat your oven to 180°C or 375°F. Rinse 2 oranges, cut them into thin slices and blanch them for a few minutes in a pan of boiling water. Then marinate them for 25 minutes in Grand Marnier while you prepare the rest.

Squeeze the remaining orange and strain its juice. Put the sugar and vinegar in a saucepan, let caramelize without stirring. Slowly add the orange juice. Cook for 5 minutes. Reserve this sauce and put aside.

Fry the duck in a casserole dish with the butter to brown evenly. Remove the duck and discard the fat. Put the duck back in the casserole, moisten with the orange sauce and the white wine. Season with salt and pepper and simmer for a few minutes.

Transfer the duck and the juice to a baking dish. Surround the meat with thyme, bay leaves and garlic cloves. Bake for 30 minutes.

At the end of this time, add the marinated orange slices and the Grand Marnier. Let cook for another 30 minutes in the oven. Serve the duck with the orange slices, the garlic cloves and the cooking juices.


Finally, do not hesitate to accompany your duck with a good Homemade Potato Puree or Braised Endives!
