First, here is the list of the different ingredients you will need to prepare my little Choux with a 10-minute preparation
- 125 ml or 1/2 cup + 1 oz water and 125 ml or 1/2 cup + 1 oz milk
- 100 g or 4 oz unsalted butter
- 1 pinch of salt and 2 tsp of sugar
- 150g or 2/3 cup flour
- 4 free range eggs
- 3 handfuls of pearl sugar
Now, here are the few steps you will have to follow to make my little Choux with a 20-minute cooking time.
Start by preheating the oven to 210°C or 410°F.
Next, pour the milk, water, butter, salt and sugar into a large saucepan. Bring to a boil, stirring occasionally.
When boiling, remove the saucepan from the heat and add the flour all at once. Stir the batter quickly with a wooden spoon until everything is smooth.
Return the saucepan to the heat and stir until the dough forms a ball and comes apart.
Remove the saucepan from the heat again and add the eggs one by one, mixing vigorously between each addition. You may use the kitchen robot!
When the dough has a slightly sticky puree consistency, the dough is ready.
On a baking tray lined with baking paper, form small puffs with a piping bag or 1 teaspoon, spacing them well apart.
Finally, sprinkle the little choux with pearl sugar and bake for 20 minutes or until the little choux are golden brown.
