This Strawberry Fondant is a real delight because it is fresh, light and easy to prepare. But for the preparation of this dessert, the choice of the fruits is essential, this is what will make its quality. Fresh fruit should be ripe.
First, here is the list of the different ingredients you will need to prepare the Strawberry Fondant with a preparation time of 20 minutes and a cooking time of 50 minutes that serves for 6 people
- 400g or 1 lb fresh and ripe strawberries
- 2 free range eggs
- 80g or 4 Tbsp whole sugar
- 30g or 1 1/2 Tbsp hazelnut oil or, if not at hand, rapeseed oil
- 100 g or 3,8 fl oz vegetable milk
- 60g or 3 Tbsp flour type 180 (very fine)
- 7g or 1 Tbsp baking powder
- 40g or 2 Tbsp ground almonds
Now, here are the few steps you will have to follow to make this delicious Strawberry Fondant
Rinse then hull and cut the strawberries. Cook the strawberries in a non-stick pan with 20 g or 1 Tbsp sugar until they have the consistency of a compote, about 10 minutes.
Place a sheet of baking paper in the bottom of an 18 cm or 7 inches diameter mold and lay out the strawberries. Let cool.
Whip the egg whites until stiff with 10 g or 2 tsp of sugar.
At the same time, mix the yolks, 50 g or 2 1/2 Tbsp of sugar, oil and milk. Then add the powders, that is to say, the flour, the baking powder and the ground almonds. Finish by gently incorporating the egg whites.
Pour the batter into the mold, gently over the strawberries. Bake for 40 minutes at 170°C or 338 °F.
Allow to cool completely before un-molding. Enjoy simply or with homemade whipped cream! It’s a delight.
