Raspberries, are on the market from late spring until October. The fruit is fragile. So, it is recommended to eat them quickly or to use them in preparations like for example this delicious Raspberry Cake. Easy to make and sooo good.

Raspberry Cake

First here is the list of the different ingredients you will need to make the Raspberry Cake that serves 6

  • 200 g (1 cup) flour
  • 200 g (1 cup) butter
  • 4 eggs
  • 120 g ( 1/2 cup) caster sugar
  • 1 Tbsp vanilla sugar
  • 1 Tbsp baking powder
  • 300g (1 1/2 cup) raspberries (fresh)


Now here are the different steps you will need to follow to make the Raspberry Cake with a preparation time of 20 minutes and a cooking time of 45 minutes

Preheat oven to 180 °C( 375°F). Melt the butter over low heat; Separate your whites from your yolks. Beat the yolks with the sugar until the mixture whitens. Pour the butter by  whisking it.

Mix together flour and baking powder and add them to the mixture. Add the raspberries. Beat the egg whites with the vanilla sugar and stir into the dough by lifting with your spatula.

Pour the mixture into your cake tin that is greased and floured and bake 45 minutes or until knife comes out clean. let cool on a rack and dust with icing sugar before serving. This cake is just a delight !
