First, here is the list of the different ingredients you will need to prepare the Passion Fruit Delight for 6 to 8 people

  • 3 large free range eggs
  • 80g or 3 1/2 oz sifted flour
  • 100g or 4 oz caster sugar
  • 6 passion fruit
  • 2 tsp cornstarch
  • 2 tbsp icing sugar

Now here are the few steps you will need to follow to make this delicious Passion Fruit Cake with a 20 minute prep and 8-10 minute bake.

Preheat the oven to 200°C or 400°F. Line a medium sized baking sheet with parchment paper. Butter and flour the paper.

Separate the egg whites from the yolks. Whisk the egg whites with a pinch of salt. Whisk the yolks with the sugar until the mixture whitens. Add half the flour and egg whites. Mix gently with a spatula and incorporate the remaining flour and egg whites.

Pour this dough on the baking sheet for 7 to 10 minutes maximum. The sponge cake should be barely golden, without being dry.

Un-mold the sponge cake immediately on a damp kitchen cloth. Remove the paper and wrap the sponge cake in the kitchen towel. Let cool.

To prepare the Sauce: Put the passion fruit juice with the sugar, the cornstarch and one tablespoon water in a small saucepan. Mix everything well and cook gently for a few minutes until the mixture is smooth.

Unroll the sponge cake gently, spread 1/3 of the sauce. Roll up your sponge cake again and cover the roll with the remaining sauce. Serve cold.
