These small Zucchini Flans are a springtime recipe by excellence, vitamins and lightness, has it all. Finally, it also lends itself to a few small variations, such as adding diced sautéed red peppers or basil to flavour the Flans.

First, here is the list of the different ingredients you will need to prepare the Zucchini Flans that serve 6 

  • 900 g or 4 cups Zucchini
  • 5 fresh eggs
  • 1 small shallot and one garlic clove
  • 200 ml whipping cream
  • 1 branch of cherry tomatoes
  • some parsley
  • 100 ml or 1/2 cup olive oil
  • 4 pinches of salt and 6 turns of a pepper mill

 

Now, here are the different steps that you will have to follow to make the Zucchini Flans with a preparation of 15 minutes and a cooking time of 20 minutes

 

First, preheat the oven to 180 °C or 350°F. Peel and finely chop the shallot. Chop the garlic. Wash the zucchinis and dice them. In a hot pan with olive oil, sauté the zucchini with a pinch of salt, without coloring. Lower the heat, add the shallot and garlic and continue cooking for 15 minutes, until they are tender.

Then mix everything into a puree. In a salad bowl, beat the eggs into an omelet, add salt and pepper then add the crème fraîche. Pour everything over the zucchini puree and mix well. Distribute this preparation in individual molds up to 3/4 of the height. Arrange the small molds in a dish in a bain marie and bake for about 20 minutes.

Wash and slice the parsley then mix finely with the rest of the olive oil. Add salt and pepper. wash the cherry tomatoes and cut them into quarters.

Once the Flans are cooked, let them cool a bit and then gently unmold them on individual plates. Decorate with wedges of cherry tomatoes and add a dash of parsley juice. Serve immediately with some crispy bread.
