These Tomato and Goat Cheese Mini Pies are an easy and inexpensive starter. They can be done in advance, when there is time. When serving, you will only have to place them on a hot oven a few minutes before!

First, here is the list of the different ingredients you will need to prepare the Tomato and Goat Cheese Mini Pies for 6 people.

  • 500 g Cherry tomatoes
  • 150 g grated Comté or Gruyère cheese
  • 300 g  fresh goat cheese
  • 2 eggs
  • 200 ml whipping cream
  • fleur de sel, freshly ground pepper and grated nutmeg

Now, here are the few steps you need to follow to make the Tomato and Goat Cheese Mini Pies. Preparation time takes 15 minutes and cooking time 40 minutes

Preheat the oven to 160 °C or 335°F. Mix the ingredients and form a ball. Place the dough and set aside in the fridge.

In a frying pan, cook the and cherry tomatoes with a drizzle of olive oil for about 5 minutes over high heat. Salt with fleur de sel and black pepper.

Beat the eggs into an omelet, add the cream, the fresh goat cheese, salt, pepper, nutmeg, the grated Gruyère cheese and finally the tomatoes. Mix well and divide the preparation among 6 buttered ramekins.

Roll out the dough, cut disks larger than the ramekins, form a cross in the center and place them on the ramekins, pressing down to make them adhere well.

Bake for about 35 to 40 minutes. Serve with a nice slice of toasted sourdough bread if you like.
