This Salmon and Dill Terrine Dish is not only traditional but also great for sharing because it is simply delicious and easy to make !

First, you will have the list of the different ingredients you will need to make the Salmon and Dill Terrine that serves 4 to 6 with a Cooking time of 45 minutes

  • 1 small shallot, peeled
  • 11 oz (300 g) salmon fillet, skin removed
  • 7 oz (200 g) fresh prawns, plus extra to decorate
  • 1/4 pint (150 ml) double cream
  • 1 egg
  • 1 tsp cornflour
  • Juice and zest of half a lemon
  • 1/2 oz ( 15 g) dill, chopped, some sprigs reserved to decorate

Now, here are the different steps you will need to follow to make the Salmon and Dill Terrine

In a food processor, pulse the shallot a few times, to chop. Add the raw salmon and pulse again; Add the prawns, cream, egg, cornflour, lemon zest and juice, season and whizz until evenly combined. Fold through the chopped dill and set aside.

Line a small, deep terrine with baking parchment and add the salmon mixture. Cover the top with another sheet of baking parchment and pat down.

Put the dish inside a larger, deep roasting tin and place in the oven with boiling water into the tin so that it comes halfway up the sides of the dish and bake for about 45 minutes.

Remove the mould from the hot water and cool completely before chilling for at least 2 hours or preferably overnight.

Turn the terrine out onto a board and remove the parchment. Decorate with prawns and the reserved dill sprigs and serve with some dressing and bread if you like.
