On Fridays, starting with small Ouessant Salmon Rolls will make a perfect starter at a simple but balanced meal. The best slices of smoked salmon, you will find them at your fishmonger. Serve this starter with family or friends when you crave for colorfoul food with strong flavours.

Ouessant Rolls

First, here is the list of the different ingredients you will need to prepare the Ouessant Salmon Rolls that servez 6

  • 6 smoked salmon slices
  • 200 g  trout fillet
  • 2 tbsp lemon juice
  • 1 teaspoon Gin
  • 1 small shallot, very finely chopped
  • 100 ml very cold whipping cream
  • Salt and pepper from the mill

Now, here are the few steps you will have to follow to make the Ouessant Salmon Rolls with a preparation of 30 minutes and 1 hour of refrigeration.

Start by cutting the raw trout fillet into very small pieces. Macerate in lemon juice for 10 minutes. At the end of this time, drain in a sieve. Then, sprinkle your preparation with a tablespoon of salt and let stand for 15 minutes.

Then rinse quickly with running water and wipe dry with paper towel.

Whip the crème fraîche to a firm whipped cream with the Gin and pepper. Mix in the small fish cubes and the shallot.

Place a good tablespoon of your Gin whipped cream on each slice of smoked salmon and form a roll. Reserve 1 hour in the fridge.

When ready to serve, add a fluff of chervil, parsley or a few sprigs of chives and Bon Appétit !
