- 120g or 1/2 cup red or coral lentils
- 1 bouquet garni (thyme, bay leaf, and sage) and 1/2 bunch of flat-leaf parsley
- 1 free range egg
- 2 Tbsp cornstarch
- 40g or 2 Tbsp grated Parmesan cheese
- 1/2 tsp curry powder and freshly ground pepper
- 1 shallot, peeled and chopped
- 30g or 1 and 1/2 Tbsp chopped hazelnuts
- 2 Tbsp grape seed Oil or corn flour oil
Now, here are the few steps you will need to follow to make these lentil croquettes with hazelnuts. They take 20 minutes to prepare and 25 minutes to cook.
Start by cooking the red lentils for about 15 minutes in a saucepan of boiling water with the bouquet garni and pepper.
Drain them thoroughly and pour them into a salad bowl. Add the beaten egg, cornstarch, Parmesan, curry powder, shallot, parsley, and chopped hazelnuts. Season with salt and pepper. Shape into balls and flatten them.
