- 12 Cocktail Tomatoes (not Cherry tomatoes)
- 150 g (1/2 cup) Cream Cheese
- 75 g (4 Tbsp) French Roquefort or Bleu d’Auvergne

Wash your tomatoes and cut the head of each tomato and keep the hats. Drain the tomatoes. Retain their flesh and discard the seeds.
Cut the flesh into small dices and set aside. In a bowl, mash the two cheeses until they are well combined. Add the tomato flesh and mix well. Add Pepper.
Take the tomatoes and stuff them with your mixture. Put hats on top and chill for 1 hour minimum. Serve on a bed of green salad if you like.
