These Vichy Carrots are just delicious and so easy to prepare and to prove that winter recipes can be fresh and light !
Here is what you need to make Vichy Carrots for 6 people
- 800 gr (2 lb) carrots
- 200 ml (3/4 cup) vegetable stock
- 20 gr (2 Tbsp) butter
- 1 onion sliced
- 3 pinch of salt and ground black pepper
Follow the Preparation of your vichy Carrots and you will be all fine
Peel, then cut the carrots in small cubes. In a pot, let the butter simmer then add the carrots and the onion until golden brown.
Pour the vegetable stock over the carrots, add the salt and pepper and let simmer for about 20 minutes or so. When ready, serve it as is with some fresh parsley or as an accompaniment.
