The humble onion is very much part of the French culinary history. The quality of the onions is crucial in this recipe. We want both acidity and sugar to create a fully flavoured onion Tart.
Here, the Ingredients for the filling
- 3 large onions
- Salt, pepper, nutmeg
- 1 spoon of flour
- 1 spoon of sour cream
- Grated Emmenthal.
But also the Ingredients for the dough
- 250 g or 2 cups Flour
- 150 g or 2/3 cup of butter
- 1 big free range Egg
- 2 Tbsp water
- 2 tsp salt
First, prepare the dough by mixing flour, butter and salt. Beat the egg with the water and add to the mixture. Then, place in the fridge for one hour.
Meanwhile, cut the onions into strips and melt them with the oil ( 3 to 4 spoons) on low heat for about ½ hour. Add salt, pepper and nutmeg .
Then, roll out the dough into a large rectangle and carefully drape it over the baking dish. You now press it into the bottom and edge of the baking pan.
First you will have to prick the bottom of the pastry shell with a fork and then, pour the prepared filling and add the swiss cheese. You now can bake your onion tart for 40 to 45 minutes in an oven at medium heat (375°F).
