Carrots with Lime

These Carrots with Lime are a delicious, almost instant dish with seasoning that enhances the whole plate ! What else than this simple dish with it lovely hints of lime. it is perfect served with fish or meat !

First, here are the different ingredients you will need to make these Carrots with Lime that serves 4 with a cooking Time of 35 minutes

  • One big bunch of carrots
  • 1 onion
  • 1or 2 limes, depending the size
  • 1 bay leaf
  • Salt and pepper
  • 2 Tbsp olive oil

Now, here are the few steps you will have to follow to make these Carrots with Lime

Start by Peeling the carrots and cut them into cubes or slices, as you prefer. Peel and chop also the onion. Then, remove the zest from the lime and then, squeeze it. Heat the olive oil in a pan, add the onion and cook for 5 minutes until golden-brown. Then, add your carrots.

Drizzle with half the lime juice and 1/2 cup (15 ml) water. Stir in the bay leaf, cover the pan and let simmer for approximately 30 minutes or so. Drizzle again with the remaining lime juice after cooking and sprinkle with the zest. You dish is ready to serve as is or with some nice fish or any meat. Please, serve hot !
