Here is the list of the different ingredients you will need to make the Broad Bean Salad with Fresh Herbs

  • 200 g of shelled fresh Broad beans (count 1 kg (2 Lb) beans with pods)
  • 2 spring onions
  • 1/2 bunch parsley
  • 6 sprigs of fresh mint leaves
  • 1 lemon
  • 2 Tbsp Argan oil
  • 1 Tbsp olive oil
  • 2 pinches of salt

Here are now the few steps you will have to follow to make the Broad Bean Salad with Fresh Herbs

Prepare the beans and parboil for 3 minutes in a large volume of salted water. Put them under cold water and drain thoroughly. Wash and hull the parsley and mint, then snip them with scissors. You must obtain cut leaves about 1 cm large.

Put everything in a bowl, chop the onions and mix  with herbs. Finally, add your broad beans to your blend.

Prepare your dressing by squeezing the lemon juice. Proceed to remove the pulp and seeds. Pour the juice into a bowl and add the Argan oil and finally the olive oil. Mix again and add salt. Spread this dressing over the preparation and stir gently so soak well herbs and beans.

This fresh and “Springly” starter is eaten without hunger accompanied by a thick and nice slice of bread!
