- 24 mussels
- 12 large prawns
- 2 small cod fillets (about 7 oz or 200 g)
- 1 carrot
- 1 leek
- 1 onion
- 4 cups (800 ml) fish stock
- 1 Saffron dose
- 2 Tbsp Olive oil
- A few sprigs of thyme
Now, here are the different steps you need to follow to make the Seafood Broth with its Small Vegetables
Start by cleaning the mussels. Then take off the hose of your shrimps and remove the black seed. Peel, wash and cut into julienne the leek and the carrot. Finally, peel and chop the onion.
Now heat the olive oil in a big frying pan and cook the leek, carrot and onion for 4 to 5 minutes. Add the mussels then pour the fish stock, the prawns, the cod cut into large cubes, the saffron and simmer for 10 to 15 minutes. when It’s ready, serve very hot.
