Cantaloup and Tomato Gazpacho

This refreshing Cantaloup and Tomato Gazpacho, As we are crossing the middle of Summer time, makes an elegant starter. Preparing it  is so easy to make you won’t believe it ! it is refreshing, and also healthy. So don’t hesitate any more and try it out… 

Cantaloup and tomato Gaspacho

Here are the different ingredients you will need to prepare the Cantaloup and Tomato Gazpacho that serves 6                             

  • 2 melons ( Cantaloup or french melon)
  • 2 ripe tomatoes
  • 1/4 red bell pepper
  • 3 Tbsp olive oil
  • 1 Tbsp sherry vinegar
  • the juice of half a lemon
  • A small bunch of basil leaves
  • Salt and Espelette pepper

Here are now the few steps you will need to follow to make the Cantaloup and Tomato Gazpacho with a preparation of 25 minutes + 2 hours in the fridge

Cut the melon in half. Remove seeds. Cut 6 melon balls with a melon spoon and refrigerate. Then, collect the rest of the melon flesh. Crush the tomatoes and chop the quart of your pepper.

Place all ingredients in the bowl of your food processor. Add olive oil, vinegar, lemon juice, basil leaves, salt and pepper. Mix and pour the gazpacho in a big bowl. Refrigerate about 2 hours.

A the end, strain the gazpacho through a sieve and whisk. Divide into small bowls, garnish with one melon ball on top of each bowl, add a basil leaf and serve, well chilled.
