Butternut Squash Soup

This velvety and smooth Butternut Squash Soup can be made in advance. Now if you want to give a kick, add some fresh and finely chopped ginger. It will cut through the richness of this nevertheless delicious Butternut Squash Soup.

Ingredients for 4 people:

  • 1 big butternut squash
  • 1 big onion
  • 1 broth cube
  • 2 cups water

Preparation :

Peel, take off the seeds of the butternut and cut it in big cubes and put them in a steamer and let cook for 15 minutes in a pressure cooker with the onion that you also peeled and cut in pieces. After that time, pour the water with the broth cube in a soup pot and let heat.Then add the pieces of butternut with the onion pieces.

Mix all together and when it has become hot, don’t forget to put some salt and pepper before serving.
