Pasta with Parsley Sauce & Chicken

The diverse shapes of italian Pasta, sizes and colors leave no room for boredom. This also applies to pasta sauces. Find happiness and try this Pasta & Parsley Sauce with ​​Chicken.

Ingredients for 4 People:

  • 500 g pasta of your choice
  • 2 big and nice chicken breasts
  • 1 onion
  • 1 teaspoon chopped fresh ginger
  • 2 tbsp olive oil
  • 1 large bunch of parsley
  • 500 ml (2 cups) vegetable broth
  • 2 tablespoons mascarpone
  • 2 tbsp lemon juice and zest
  • Salt and freshly ground pepper

Finely chop the onion. Heat olive oil in a pan and sear the chicken fillets. Remove them from the pan and let stand. Sweat the onion, add the ginger and cut the chicken breasts into cubes, salt and pepper. Reserve a few sprigs of parsley and chop finely the rest. Add chicken cubes, parsley, vegetable broth, mascarpone, lemon juice and zest and mix well.

Cook the pasta according to directions on package. Once cooked, mix your pasta to the sauce you just made, add some parsley sprigs and serve immediately.
