Macaroni with Green Sauce and Pine Nuts

Here is first the list of the different ingredients you will need to make the Macaroni with Green Sauce and Pine Nuts that serves 4

  • 400g ( 2 cups) macaroni
  • 500 g ( 2 1/4 cups) spinach
  • 2 Tbsp olive oil
  • 2 Tbsp butter
  • 1 garlic clove, crushed
  • 4 Tbsp chopped double cream
  • 150 ml (1/2 cup) vegetable broth
  • 4 Tbsp ricotta
  • 2 Tbsp pine nuts
  • Salt and freshly ground pepper

Here are now the few steps you will have to follow to make the Macaroni with Green Sauce and Pine Nuts

Wash the spinach and plunge them into a small amount of boiling water. Pour the water and pass the spinach under ice cold water. Drain them, squeeze them and chop them coarsely. You may use frozen spinach for less work.

Sauté the spinach in hot butter added a with a little olive oil for about 3 minutes. Add the cream, vegetable broth and half the ricotta. Stir and simmer over low heat for about 8 minutes.

Toast the pine nuts in a dry skillet. Cook the pasta “al dente” in plenty of boiling water and then, drain. Mix this green sauce with your pine nuts and serve your pasta, drizzled with the green sauce and sprinkled with the remaining ricotta.
