What is a Flammekuche?… It’s a cute Alsatian word for what is known in plain French as the “Tarte Flambée”. It has usually a thin-crust made with cream, sliced onions and lard. Traditionally baked in a wood-burning oven, you can easily make it at home in your oven.

Why do it my way? Because I suggest making this delicious savoury Tart with a thick crust instead and lots of red onions, topped with sage leaves. Whatever you call it, it’s a mouth-watering dish…

Now, here is the Flammekuche Thin Crust version

First, here is the list of the different ingredients you will need to make the Flammekuche that serves 4 to 6

  • 450 g  bread flour
  • 15 g (1Tbsp) fresh yeast or 1 sachet dried yeast
  • One tablespoon olive oil, 1 teaspoon salt and 1 Tbsp caster sugar
  • 30 cl (1 1/4 cup) warm water
  • 150 g (1/2 cup) buttermilk or greek yogurt
  • 2-3 red onions
  • 6 fresh sage leaves

Now, here are the different steps you will need to follow to make the Flammekuche

First, for the dough, dig a well with the flour and sprinkle salt around. Dissolve the yeast and dissolve sugar in warm water and let stand. Then, pour the thickened yeast and olive oil into the flour and mix well. Knead into a soft dough and then a ball, sprinkle with flour and cover with a damp cloth and let rise about 45 minutes.

Preheat oven to 240 °C ( 420°F). Then, knead the dough and spread it to the size of a cooking plate.( like on the picture). Cut the onions into thin slices and sauté in a little olive oil until golden.

After that, mix greek yogurt or buttermilk with a little salt and pepper and coat the dough with it. Spread the onions and the chopped sage leaves on top of the dough and cook your Flammekuche for about 15 minutes or until it is golden brown.
