Turkey and Dried Fruit Casserole

The beauty of the Turkey and Dried Fruit Casserole is that you can cook it in just the one pot and the end result is succulent too. Serve the casserole with baked potatoes or Pilaf Rice.

Turkey and Dried Fruit Casserole

First, here is the list of the different Ingredients you will need to make the Turkey and Dried Fruit Casserole that serves for 4 

  • 2 Lb or 1 kg turkey breasts, cut into thick cubes
  • 100 g or 3 1/2 oz dried apricots
  • 50 g or 1 3/4 oz dried raisins
  • 100 ml or 1/2 cup white wine
  • one bouquet garni
  • 200 ml or 1 cup chicken stock
  • 100 ml or 1/2 cup heavy cream
  • 2 tablespoons oil
  • 30 g or 1/4 cup flour
  • Salt and freshly ground pepper

Now here are the few steps you will need to follow to make the Turkey and Dried Fruit Casserole in about one hour

Start by Soaking the dried fruit in warm water. Sauté the meat in oil, then add salt and pepper and sprinkle with flour. Mix thoroughly, then, pour the white wine and broth and add the bouquet garni.
Cover and let cook for about 30 minutes over low heat. After that time, add the drained and dried fruits and also the heavy cream. Simmer for another 30 minutes, covered, but stirring occasionally but regularly.
Just before serving, check the seasoning, remove the bouquet garni and place the turkey meat pieces in a deep dish.

You may serve it with some baked potatoes or with a rice pilaf !
