This Spatchcock BBQ Chicken is nothing else than a flattened grilled Chicken but with a lot of flavours. You can even marinate the chicken with a few peeled garlic cloves and olive oil for 2 hours before cooking !
First, here is the list of the different ingredients you will need to prepare the Spatchcock BBQ Chicken that serves 4 to 6
- One Free Range whole Chicken about 1,5 kg or 3 to 4 pounds
- Olive oil
- Salt and pepper from the mill
- 1 head of garlic cut in half and crushed
For the sauce
- 2 tbsp. Ketchup and 2 tbsp. Soy Sauce
- 1 teaspoon Worcestershire Sauce
- a few drops of tabasco (optional)
- Provence Herbs
- 1 Tbsp french Mustard
Now, here are the few steps you will have to follow to make the Spatchcock BBQ Chicken with a 15-minute preparation and a 1 hour cooking time
Prepare the sauce by mixing all the ingredients in a bowl and set aside. Place the chicken flat on a cutting board. Using a sharp knife, insert the knife and make a lengthwise slit along the backbone. Slice the wishbone in half. (This is the small forked bone in the center of the chest).
Open and flatten the chicken. Season inside and out with salt and pepper and massage it all well with olive oil.
Heat the plancha over medium heat and place the chicken flat, opening underneath. After 20 minutes of cooking, turn the chicken over and flatten well again and, with a brush, coat the inside of the already cooked chicken with the sauce.
Continue cooking for 30 minutes and brush the chicken with sauce regularly while cooking. Ten minutes before the end of cooking, turn the chicken over again so that the meat grills evenly.
Serve your Spatchcock BBQ Chicken well grilled with the accompaniment of your choice. French Fries, Ratatouille or simply a good green salad.
