Ingredients for 4 People:

For the Batter:

  • 1 cup (250 g) flour
  • 3 eggs
  • 1 pinch of salt
  • 1 Tbsp (20 g) caster sugar
  • 2 cups (1/2 liter) milk

For the Filling:

  • 2/3 cup (150 ml) double cream or whipping cream
  • 4 slices of smoked salmon cut into thin strips
  • 1 tbsp chives or dill
  • 2 pinches salt and pepper

Make the batter as directed in the recipe Pancakes paste and set aside.

Whip the very cold double cream firm, add salt at the end. Stir in salmon strips and herbs and adjust seasoning if necessary.

Make your pancakes in a small pan and stack them to keep them warm.

A rate of 4 small pancakes per person, garnish with a layer of whipped cream salmon / herbs and finish with a pancake that you can decorate with smoked salmon stripes.

Serve immediately with a mixed salad if you like.
