Sea Bass in Potato Crust

Here is the list of the different ingredients you will need to make the Recipe of Sea Bass in Potato Crust

  • 4 Sea Bass fillets
  • 4 large potatoes
  • 1 egg white
  • 2 Tbsp. corn oil
  • 2 Tbsp butter
  • salt, pepper.
  • cream, 1/2 cup (optional)
  • 1 small bunch of Tarragon

Now here are the different steps you will need to follow to make the Sea Bass in Potato Crust

First, Wash and dry the fish fillets. Then, peel the potatoes and wash them, using the side of a cheese grater and shred the potatoes. Drain well, then place in a bowl. Add the egg white and mix well.

At cooking time, place the oil and butter in a large skillet and heat until hot.

Meanwhile, sprinkle half the salt on the fish fillets.

When oil and butter are hot, place eight, small, evenly spaced mounds of shredded potatoes in the skillet.

Press a portion of fish onto four mounds, cover the fish with the remaining potatoes mounds. Sprinkle with the remaining salt.

Cook the potatoes packages over medium to high heat, uncovered, 8 to 10 minutes. Turn them carefully with a large spatula, and cook them for an additional 8 to 10 minutes on the other side.

The potatoes should be nicely crusted on both sides and the fish inside cooked.

Serve immediately with a creamy Tarragon sauce if you wish but it also tastes fine as is.
