Turnover Aniseed Omelet

to enjoy eggs that you can find in large quantity and of good quality, try without delay this recipe. Low in calories, eggs are a valuable food source.


Serves 2                             Cooking time 25 minutes

  • 4 large free range eggs
  • 1 onion
  • 2 Tbsp olive oil
  • 4 small tomatoes, peeled, seeded and cut up
  • 1 Tbsp pastis
  • 1 Tbsp chopped parsley
  • Salt and fresh pepper


Chop the onion finely. Let it melt over low heat for 10 minutes in a pan with one tablespoon of olive oil. Add the 4 small tomatoes broken up and finally the salt and pepper.

Bake about 10 minutes then add the tablespoon of  Pastis and parsley, continue to heat for a few more seconds and then keep warm in a bowl.

Beat the 4 eggs with 1 tablespoon of water, salt and pepper. Heat oil in a small pan, pour half of the omelet and cook it quickly. Place half the onion-tomato preparation on half of the omelet. Fold it and slide it onto a warm plate.

Repeat the last part to make the second omelet.

Serve promptly and enjoy.
