- 1 cup (200g) white chocolate
- 1 3/4 cup (450 ml) very cold whipping cream
- 2 oz (50 g) icing sugar
- 2 oz (50 g) sliced almonds
- 1 big cup (250 ml) red fruit coulis (optional)
- Some mint leaves.
Now Here is the procedure for making the White Chocolate Mousse
Melt the white chocolate gently with 2 oz (50 ml) liquid cream. Leave on hold. Whip the rest of very cold cream into a firm whipped cream, incorporating the icing sugar at the end. Gradually blend this chantilly with the cooled white chocolate, turning gently with the spatula.
Pour the foam into a hollow dish, sprinkle with crushed almonds and stir in the fridge. When serving, lightly cover the plates with red fruit coulis. Place two fine spoonfuls of mousse on top and decorate with fresh mint leaves. Serve immediately.
