Apricot & Lime Carpaccio

A true delight, fresh and so simple to do. A nice way to really enjoy your vacation

Ingredients for 6 People:

  • 16 Apricots,  firm
  • juice of one lime
  • 2 tablespoons powdered sugar (optional)
  • 3 sprigs of fresh mint

Wash and stone the apricots. Cut into small dices and put them in a bowl.

Sprinkle with lemon juice, add the chopped mint and mix gently. let aside.

When ready to serve, take a cookie cutter or alternatively, a small tartelette pan and fill your mix diced apricots, pack a little and then turn over on a dessert plate.

Serve, accompanied by a small sprig of fresh mint and small cookies if you like.
