Apple Mousse

First, here is the list of the different ingredients you need to make the mousse

  • 3,5 pounds of apples
  • 10 oz sugar
  • 6 egg whites
  • Salt.

Here is the list of the different ingredients you need to make the Vanilla Custard

  • 6 egg yolks
  • 5.5 oz sugar
  • Vanilla extract
  • 1 pint of milk.


Now, here are the different steps you will need to follow to make the Apple Mousse

Cook the peeled apples with 2 Tbsp water for 20 minutes on low heat. Add 7 oz sugar and stir.

Mix the apples. Put 1 oz of sugar in a saucepan, add 1 Tbsp water and make a blond caramel that you will pour in a charlottes mould.

While the cooking of the apple sauce, separate the eggs and beat egg whites until very stiff. Combine with the cold apple sauce. Pour batter into prepared mould and cook in medium oven in a double boiler during 30 to 40 minutes.

For the egg custard, heat the milk with the vanilla extract. Beat the egg yolks with the sugar until it whitens, then pour slowly the hot milk while turning constantly. Let the custard thicken while turning. It has to cover the wooden spoon.

Turn out the apple mousse on a plate and serve with the cooled vanilla custard.
