Dark Chocolate Salted Caramel Tart

This Dark Chocolate Salted Caramel Tart uses the classic combination of Caramel and Chocolate. This tart is delightful and perfect to serve with afternoon tea or coffee.

First, here is the list of the different ingredients you will need to make the Dark Chocolate Salted Caramel Tart that serves 6 to 8                      

For the Crust

  • 1 1/2 cups flour
  • 1/4 cup cocoa powder
  • 1/4 tsp salt
  • 5 oz butter, cubed and softened
  • 1/2 cup confectioners sugar
  • 2 egg yolks
  • 1/2 tsp vanilla extract

For the Caramel

  • 1 1/2 cups sugar
  • 90 ml water
  • 3 Tbsp light corn syrup
  • 1/4 tsp salt
  • 3 oz butter
  • 7 Tbsp whipping cream

For the Ganache

  • 1/2 cup heavy cream or whipping cream
  • 4 oz bittersweet chocolate, finely chopped
  • Fleur de sel for garnish

Now, here are the different steps you will need to follow to make the Dark Chocolate Salted Caramel Tart with a Preparation of 20 minutes and a cooking time of 25 minutes  

Preheat the oven to 350°F (180°C) . Make the crust, then press dough evenly into a tart pan. Refrigerate for 30 minutes. Prick the tart shell and bake for about 15 minutes. Transfer to a rack and let cool.

In a small saucepan, make the caramel by whisking together sugar, corn syrup, salt and water and bring to a boil. Cook continuously until the caramel turn to a rich amber colour. Then remove pan from heat and whisk in butter and cream until smooth. Pour the caramel into your cooled tart shell and let cool again. Refrigerate overnight.

Bring the cream to a boil in a small saucepan. Put the chocolate into a medium bowl and pour in the hot cream. Let stand for a minute, then stir slowly with a rubber spatula until smooth. Finely, pour your ganache evenly over the tart, covered with caramel and refrigerate again overnight.

Before serving, you can sprinkle the tart with some sea salt. Serve chilled, and… Bon Appétit !
