Blueberry Molten Cake

We all know that September and October are the most abundant months of the year in berry varieties. We love transforming them..We may add them to smoked salmon, in brioche,but also like here in these Blueberry Molten Cake !

Ingredients for 6 People:

  • 2 egg whites
  • 25 g (3 Tbsp) flour
  • 100 g (1/3 cup) icing sugar
  • 85 g (1/4 cup) ground almonds
  • 80 g (1/4 cup) melted butter
  • Zest of 1 lemon (optional)
  • 125 g (1/2 cup) fresh blueberries

Preheat your oven to (180°C) 375°F. Sift the flour and icing sugar then add the ground almonds to it. Whisk the egg whites and gently fold into the mixture. Add the lemon zest and melted cooled butter. Mix well. Finally, add the blueberries.

Grease and flour individual molds and pour the batter into it. Bake your little individual molds for 20-25 minutes depending on the depth of your molds. Check for doneness by stabbing with a knife point. let cool slightly, then turn out onto a wire rack and enjoy.
