Apricot & Almond Cream Tart

Ingredients for 6 people:

  • 2 savoury pastry dough
  • 6-8 apricots
  • 1 sprig rosemary
  • 90 g ( 6Tbsp) almonds
  • 90 g (6 Tbsp) butter
  • 100 g (1/2 cup) icing sugar
  • 2 eggs

Turn the oven to 180 ° C (365°F). Remove the baking sheet from the oven and line it with a parchment paper. Mix the almonds with the butter, icing sugar and the eggs and beat well.

Roll out the first dough into a rectangle on a floured surface. Put it on the prepared baking sheet. With the other dough, cut strips that you put around your rectangle on top of the first dough to form a thickened. Make them stick together with a little water.

Spread the almond cream on your dough,then apricot halves and a few sprigs of rosemary and bake for 30 to 40 minutes.
