Stuffed Rucola and Chicken Fillet Wraps

These Stuffed Rucola and Chicken Fillet Wraps are a nice way to enjoy entertaining!  Lunch doesn’t have to be a quick sandwich . More and more we are saving time by combining meetings with lunch!  the food doesn’t have to be fancy, but it should be fulfilling. You can also turn it into this way to be a guest at your own party, now that the beautiful days are ahead… 

Stuffed Rucola and Chicken Fillet Wraps

First, here is the list of the different Ingredients you will need to make the Stuffed Rucola and Chicken Fillets Wraps for 8 Wraps

  • 2 chicken breasts
  • 2 tbsp olive oil
  • 1/2 cucumber
  • 1 large white onion (optional)
  • 1 small bunch of Rucola
  • 4 Flour Tortillas Wraps
  • 4 tbsp Pesto verde ( green pesto)

Now, here are the few steps you will need to follow to make the Stuffed Rucola and Chicken Fillet Wraps

Start by putting some salt on the chicken fillets, pepper and sauté for about 10 to 15 minutes depending on the size in hot oil. Remove and let cool slightly, then cut into thin slices. Set aside.

After that, peel the cucumber, cut it in half lengthwise, remove the seeds with a small spoon and cut into thin slices. Do the same with your white onion. Finely, cut also into thin slices.

Then, wash your Rucola salad and wring it. Heat a few minutes the tortillas in a preheated oven at 180°C  or 398°F. Take the Tortillas out of the oven and cut them in half.

In Conclusion : Finely, brush the half tortillas with Pesto Verde and spread the filling on top. Roll the tortillas into a cone and sprinkle with a drizzle of olive oil if you wish before serving. Enjoy while the thin chicken slices are still warm.
