Lorraine Radish Salad

Ingredients for 4 People:

  • 1 big bunch of radish
  • 2 slices of smoked bacon
  • 400 g small new potatoes
  • 1 shallot , finely chopped
  •  salt & freshly ground Pepper
  • Half a curly Lettuce
  • 2 tablespoons white wine vinegar

Wash the radishes, cut the ends and tops. Bleach your radishes  5 minutes in boiling salted water. Drain and plunge into a bath of cold water containing ice cubes. ( This will prevent them lose their lovely color). Wash the tops of the radishes and set aside.

Wash the potatoes and cook in salted water. When they are cooked, peel them and keep them warm.

Cut the bacon into small pieces and clean the salad. In a skillet , sauté bacon with shallots. add radishes to glaze. Discard excess fat. Pour the vinegar and heat it to deglaze the pan with the warm vinegar.

Arrange the salad and radishes tops on plates, add potatoes cut in half lengthwise and pour the content of the pan on the salads and potatoes plates. Give a twist of pepper and serve immediately.
