Liver Mousse Flan

First, here is the list of the different ingredients you will need to make the Chicken  Liver Mousse Flans that serves 6

  • 1/2 lb fresh chicken liver, trimmed
  • 1 Tbsp butter
  • One onion or shallot
  • 2 Tbsp sour cream
  • 1 egg
  • Chopped parsley, 1 pinch salt, 1 pinch pepper
  • 2 pinch nutmeg

Here are the ingredients for the white Sauce

  • 1 Hooped Tbsp flour
  • 1 Tbsp butter
  • 1 cup milk
  • Salt

Now, here are the few steps you will need to follow to make the Chicken Liver Mousse Flans

Start by dissolving the butter and flour until the mixture is creamy. Add the cold milk in one shot. Then, add salt and pepper and blend until it thicken.

After that, chop finely the onion or shallot and the parsley. Melt one Tbsp butter in a pan and fry the onion of shallot for 2 to 3 minutes until golden brown. Add them to the food processor with the chicken livers, the white sauce, the beaten egg, the cream, salt, pepper and nutmeg.

Mix this mixture until smooth.

Butter the flan cases generously and fill them with the mixture by pouring the preparation to 1/2 inch to the top (it will raise).

Then, cook your small flans in a hot oven for approximately 45minutes, placed in a double boiler.

Take the flans of the oven and let cool a little bit. Then, put the flan case up side down on a plate and serve the mousse like that but i suggest serving it with some tomato sauce.
