Cocktail Tomatoes Stuffed with Two Cheeses

It is easy to prepare simple dishes that remain healthy, delicious and that can be eaten cold or reheated just before serving. Tomatoes, at the best of their flavour, can be stuffed as in this recipe of Cocktail Tomatoes stuffed with 2 cheeses.

Ingredients for 4 people:

  • 12 Cocktail Tomatoes (not Cherry tomatoes)
  • 150 g (1/2 cup) Cream Cheese
  • 75 g (4 Tbsp) French Roquefort or Bleu d’Auvergne
  • Pepper

Wash your tomatoes and cut the head of each tomato and keep the hats. Drain the tomatoes retain their flesh and discard the seeds.

Cut the flesh into small dices and set aside. In a bowl, mash the two cheeses until they are well combined. Add the tomato flesh and mix well. Add Pepper.

Take the tomatoes and stuff them with your mixture. Put hats on top and chill for 1 hour minimum. Serve on a bed of green salad if you like.
