This Celeriac & Pomegranate Salad can be called an early Spring Salad. The strong taste of celery matches very well with these pomegranate seeds, full of colour and fragrant.

- 1 celeriac, peeled and quartered
- 1 prepared grenade
- 20 cl single cream
- 2 c. tablespoons mustard
- Salt and pepper

Cook the celeriac in boiling salted water for 4 to 5 minutes to soften it and make it lose its odour. Then cut into thin strips or simply grate.
Put the mustard in a bowl. Stir and add the cream. Add salt and pepper. Season the grated celery with your tangy sauce and let marinate for about one hour.
Finally, add your pomegranate seeds and serve immediately. it is fresh and jouicy.
