Best in Winter, and season’s best are Oranges and Clementines. These members of the citrus family are rich in vitamin C. Everybody knows that… Now, here is a nice twist with this Clementine Posset to enjoy. The smaller, sweeter Clementines are also a popular variety. So, let’s try it out without any hesitation.
First, here is the list of the different Ingredients you will need to make the Clementine Posset that serves 4
- 4 Clementines
- 500 ml (2 cups) double cream
- 75 ml (1/3 cup) natural yogurt, greek style
- 50 g (3 Tbsp) caster sugar
- 75 ml (1/3 cup) golden honey
- 1 vanilla pod
Now, here are the few steps you will have to follow to make the Clementine Posset
To start, place in a medium pot that you bring to a simmer with the juice and zest of 4 clementines, 500 ml or 2 cups double cream, the natural yogurt, the caster sugar, the golden honey and the vanilla pod.
Allow the mixture to simmer for ten minutes and then remove from the heat and strain through a fine sieve. After that, pour your mixture into cocktail glasses or ramekins and allow to cool. When cold, place in the fridge for 3 to 4 hours to set.
After that time, you may serve these Clementine Posset with either red currants or a small slice of fresh peeled clementine put on top of the glasses for a zingy treat and enjoy .
