First, here is the list of the different ingredients you will need to prepare the Spinach, White Fish and Peanut Soup with a preparation time of 20 minutes and a cooking time of 40 minutes.
- 1 onion and 2 garlic cloves
- 5 cm or 2 inch fresh ginger
- 100g or 4 oz Cod
- 150g or 5 oz peanuts
- 1 heaped tbsp olive oil
- 1 tsp cumin and 2 tsp ground coriander
- 1 liter or 1 3/4 pints vegetable broth
- 150g or 5 oz baby spinach
- 150ml or 5 fl oz coconut cream
Now, here are the different steps you will have to follow to make this Spinach and White Fish Soup that serves 4 people
Peel and chop the onion, garlic and ginger. Cut the fish into large cubes. Fry the peanuts dry for 5 minutes, stirring regularly.
In a skillet, heat the oil, add the onion, ginger and garlic. Mix for 3 minutes, salt and pepper. Add the broth and simmer for 10 minutes. Add the baby spinach and your roasted peanuts. Continue cooking for 5 minutes covered.
Mix the soup by adding the coconut cream then put back on the heat for 5 minutes.
In a pot of boiling water, poach the fish cubes for 5 minutes. Set aside.
Serve the soup with the fish cubes, a few fresh baby spinach leaves and a few peanuts.
