Salt Cured Roast Beef

Salt-curing is perfect for summer or hot weather. This recipe is ideal when you have friends over and want to spend time with them. Thanks to my friend Marie-Pierre that allowed me to publish her recipe. Be aware : It’s a recipe you have to make 48 hours in advance !

First, here is the list of the different ingredients you will need to prepare this Salt-Cured Roast for 6 people, which takes about 15 minutes to prepare

  • 1 kg beef roast (from the sirloin tip)
  • 3 tablespoons of olive oil
  • 1 small bunch of thyme
  • Freshly ground pepper
  • 1 kg of coarse salt

Now, here are the few steps you’ll need to follow to make this Salt-Cured Roast Beef

Start by generously coating your beef roast with olive oil, then spread the freshly ground pepper all over the surface of the meat. Next, roll it in the thyme so that it’s completely covered.

Place a layer of coarse salt in a loaf pan slightly larger than the roast and place your meat on top. Completely cover the meat with coarse salt.

Seal the pan tightly with cling film and let it rest for 48 hours in the bottom of your refrigerator. After this time, remove the meat and gently scrape off as much salt as possible with a knife, leaving the thyme on the meat.

Slice the meat thinly, making sure to remove any string if you have it. Serve your meat cold with some Hummus, Tabbouleh, or any other salad you like, and… enjoy !
