In this Rabbit Rillettes recipe, everything is delicious, easy, and inexpensive. Rabbit, which is a lean meat, lends itself particularly well to this dish, and you are offering this appetizer that can be made ahead of time to enjoy your friends and/or your family!

First, here is the list of the different ingredients you’ll need to prepare these Rabbit Rillettes that serves 6 people

  • 2 rabbit legs and 1 saddle2 red onions
  • 4 celery stalks
  • 3 thyme sprigs, chives
  • 1/2 glass of dry white wine and 1/2 glass of water
  • 2 pinches of Espelette pepper, salt, and pepper
  • Olive oil

Now, here are the few steps you’ll need to follow to make these Rabbit Rillettes with 1 hour of cooking time and 10 minutes of preparation time.

Brown the rabbit pieces in an ovenproof casserole dish with a little olive oil. When the pieces of meat are golden brown, add the diced onions, the celery cut into small pieces, the thyme, and a little olive oil.

Sauté for 5 minutes, then pour in the white wine and water, season with salt and pepper, and sprinkle with Espelette pepper. Cover and simmer for about 1 hour over low heat or in the oven at 150°C or 325°F.

Add a little water halfway through cooking if necessary. Let cool, then skin the rabbit pieces completely, breaking up the meat with your fingers. Mix the meat with the vegetables and the casserole juices and chill in jars.

When ready to serve, sprinkle some chives over the terrines and serve with toasted sourdough bread.

Tip: You can also blend the mixture in a food processor for a more chopped texture!
