Marseille Biscuits with Orange blossom

We have finally arrived at the time of the small Marseille biscuits with orange blossom. It’s summer, the cicadas are here. These crispy small baked biscuits with an unmistakable orange blossom aroma awaits us…

First, here is the list of the different ingredients you will need to prepare these Orange Blossom Biscuits from Marseille that serves 4 to 6

  • 250g flour
  • 100g sugar
  • 4 tbsp olive oil (approximately 40ml)
  • 2 tbsp orange blossom water
  • 1 egg
  • 1/4 tsp salt
  • Milk for brushing the biscuits

Now, here are the steps you will need to follow to make these delicious Orange Blossom Navettes de Marseille. Preparation time takes 15 minutes, and baking time takes 12 to 15 minutes, depending on your oven.

Start by beating the egg and sugar until the mixture is light and fluffy. Add the salt, orange blossom, and olive oil. Preheat your oven to 180°C (350°F).

Gradually add the flour, then finish kneading the dough by hand until you have a smooth ball. Let the dough rest for about an hour.

Divide the dough into equal-sized pieces. (I was able to make 16 biscuits / navettes).

Shape the biscuits-navettes (roll each piece into a log about 10 cm (4 inches) long). Pinch the ends and make a lengthwise slit in each navette with a knife. Then, using a small brush, coat the navettes with milk.

Bake on a baking sheet for about 12 to 15 minutes. As soon as they are lightly golden, remove from the oven and let them cool.

These biscuits-navettes keep very well in a tin.
