This Silken Sweet Potato Cake is a healthy and delicious cake, and a wonderful alternative to a Banana Bread!

First, here is the list of the different ingredients you will need to prepare this Silken Sweet Potato Cake that serves 6 people

  • 3 Sweet potatoes
  • 3 whole eggs + 1 egg white
  • 1/2 can coconut milk
  • The juice and grated zest of one unwaxed lemon
  • 1 vanilla bean
  • 100g or 1/2 cup melted butter
  • 50g or 2 1/3 Tbsp cane sugar
  • 125g or 1/2 cup + 2 small Tbsp flour
  • 150g or 1/2 cup + 2 1/3 Tbsp powdered sugar
  • Poppy seeds (optional)

Now, here are the steps you will need to follow to make this delicious Silken Sweet Potato Cake, which takes 20 minutes to prepare and 1 hour 30 minutes to bake

Peel the sweet potatoes and cut them into cubes. Place them in a saucepan of boiling salted water and cook for about 20 minutes. Drain. Heat the coconut milk with a vanilla bean split lengthwise and the cane sugar. Let it infuse for 10 minutes and then remove the vanilla bean.

Mash the sweet potatoes with the coconut milk, add the eggs one at a time, whisking well after each addition, then add the melted butter, lemon zest, and finally the flour.

Preheat the oven to 180°C (350°F). Pour the mixture into a greased and floured loaf pan and bake for one hour.

Remove from the oven and after 5 minutes, unmold and let cool on a wire rack placed over a cake plate. In a bowl, whisk the egg white until frothy. Whisk in the powdered sugar and lemon juice, Then spread the glaze over the surface of the cake.

Sprinkle with poppy seeds if desired, and let it set if you can wait until serving.
