Chocolate Mousse

This Chocolate Mousse is an absolute delight because we can really appreciate the cacao of this light and fluffy dessert. Dusting some salt on top is the ultimate way to enjoy this mousse.

First, here is the list of the different ingredients you will need to prepare the French Financiers that serves 6 people

  • 200 g or 7 oz dark chocolate, cut in small pieces
  • 6 free range, yolks and whites separated
  • 30 g or 1 oz butter
  • 40 g or 1.4 oz caster sugar
 

Now, here are the few steps you will need to follow to make this Chocolate Mousse with a 15 minutes preparation time and a 2 hours cooling time

Place the chocolate and butter in a large bowl set over a pan of hot water and leave to melt over low heat. Do not boil the water or the chocolate will become grainy. Stir until smooth, then remove from heat. Let rest. Beat the egg yolks together with the sugar until whitening. Once your chocolate and butter mixture is back to room temperature, mix together with the egg yolks until well incorporated. Beat the egg whites until stiff, then whisk in a quarter into your chocolate/butter/yolks mix. Fold in the remaining egg whites with a large spatula. Pour into a glass bowl or individual glass pots and leave to set in the fridge for 2 hours and serve. You may serve this Chocolate Mousse with some French Financiers...
